Vegetarianism

I am doing good with cutting out meats. I did have a tuna sandwich for lunch today but otherwise I haven’t missed having real meat. It’s been 4 days. The only problem with going vegetarian is having to cook two separate meals. I got some tofu and chinese eggplant that I’m going to cook up tomorrow for dinner, but I doubt Brian is going to eat that. So I have to find a way to make two quick meals on a work night. I supposed the only reason I’m cutting out meat is that I’m trying to eat cleaner. I figured if I cut out the meat, I’m forced to eat more veggies and therefore cook more of it. I suppose eventually if I ever do want to eat meat, we’ll go for organic and free range ones.

Anyway, we spent the day today cleaning and reorganizing. It’s been almost a year since we’ve moved in and the place is a clutter. I cleared the kitchen counters so it looks less cluttered. I even moved some of the canned goods and spices into the cabinet next to the fridge to make room in the pantry.

Brian spent the morning hanging some floating shelves that we got for Christmas and then spent the afternoon clearing out the tubs in the back bedroom. It looks less like a storage room. Even the office downstairs is clean.

We even went and looked at some new model homes to get ideas for decoration, but I was more inspired by all the modern touches of the houses than I was with the decor. Too bad we didn’t take any pictures. I would love to someday have dark wood floors downstairs. Although it might clash with our cabinets.

I am so glad the studying is over. It’s so nice not having to spend all your free time studying or thinking about studying. I can now enjoy reading the book for my work bookclub and watching tv. Next week, we’re having a rock band party and I’m going to spend Sunday planting flowers in our yard.

Oh and since I’m rambling, Reesey had an animal’s head in her mouth yesterday. I could tell she had something in her mouth as soon as she ran inside. I was too afraid to try to take it from her, so I threw a snausage across the room. She dropped whatever she was trying to eat to grab the snausage and I shrieked the entire time I was trying to pick up the nastiness that she brought into the house. Brian was still in bed as it was only 7am, but he came running down to see what was going on. I had him look in the trash and I think we both agreed it was a head of some sort. I could totally see guts sticking out from the head. Yuck. What a gross doggy!! No kissies for her!

Anyway, I haven’t started meditating yet, but I will start this week. I need to find articles or books to see how I can do this effectively. So if anyone has any recommendations, let me know. I know a girl at work that is interested in doing it with me if I happen to find a class. But I think I’ll try mastering it by myself first.

March Daring Baker’s Challenge

I was supposed to spend all of March studying for my PMP exam. However, since I had Good Friday off, I spent the morning whipping up this challenge. The cake itself was easy to make, but I am no cake decorator. In fact I am such a failure at it. I’m not sure what it is, lack of tools, lack of patience. Whatever it is, the cake turned out delicious. The consistency was dense yet light. It was almost like a dense angel food cake. Not sure how to describe it. It almost tasted like our white cake from our wedding. The icing itself was perfect. I’ve tried making my own icing before, but it just turned out lumpy regardless of how I followed the recipe. This was light and not too sweet [...]

Salmon Piccata and Spinach stuffed Crepes

It was more like 2 meals in 1. Originally I was going to make salmon stuffed crepes, but I saw this on Monika’s food blog so I thought I would try it. It only took 45 minutes to make the entire meal so it wasn’t bad. I have to say it is quite different from my usual meals but I loved it. I even took it to work today, but a lunch outing at an Indian place was much more enticing.

Back to the gym

I worked out today. YAY. I actually brought my workout clothes to my cube so I can run downstairs to do some cardio. It’s a good feeling. Now if only I can keep this up for the next few weeks.

I’ve even started counting my calories today. Hopefully that will deter me from eating bad stuff. This morning I had a bagel. Then for lunch I had a frozen entree – Chicken Tikka Masala. I’m not sure what to do for dinner. My plan is to limit the amount of carbs at night. I bought some salmon yesterday, so we be having fish.

This weekend was quite uneventful. Brian hung the speakers I bought him for Christmas. They’re now nicely hung in the downstairs family room. If only he can do the same upstairs or maybe hang some of my other stuff. We also did laundry. I studied some. THANK GOD my PMP exam isn’t tomorrow. I would’ve died from test anxiety. Oh and we also went to Home Depot and got a bunch of grass fertilizer and weed killer. I had a dream the other night that our front lawn was full of weeds. Needless to say, there were a bunch of weeds. UGH. I blame our neighbors.

Anyway, that’s all I got.

Daring Baker’s Challenge

I am proud to be a member of the Daring Baker’s Challenge. This is my first challenge, and needless to say I was quite intimidated. Julia Child’s french bread. I remember growing up watching this her on the weekends and thinking how odd she was. I never really saw her as an icon for cooking shows. But her and Jacques Pepin were the best of the best. Anyway, here’s this month’s recipe. [...]

The Best or Worst Fish

This is cited from the Weekly Spark articles I get. Some of it is surprising, although I don’t know too much about fish. I always thought shellfish was bad, I guess Oysters are actually good for you, although I don’t even know if oysters are shell fish. I’m also surprised that Bluefin Tuna is bad for you. Anyway, we need to eat more fish in our house [...]

Valentines

Brian and I usually celebrate by going to a movie, having a nice dinner and sometimes even exchanging gifts, only because there’s not too many times out of the year where you can celebrate yourself as a couple. Over the past 2-3 years though, we’ve taken it light. It’s nice not to have to stress out about it.

Last year, Brian came home and made dinner. This year we’re doing the same, although we’ll be cooking together. I splurged (got carried away) at Central Market. I have to admit that place is a rip off, but it’s hard to avoid at times. Anyway, so that’s our plans for vday. Too bad our fireplace doesn’t work, otherwise, we can enjoy a good movie in front of the fireplace.

Speaking of which, I think we’ll wait until the summer to get it fixed. It may be cheaper then.

Anyway, I’m a little over halfway done with re-reading my PMP Textbox. I got some other study materials from Amazon which I’ll conquer this weekend. Only one month to go.

I’m also looking at the PM Certificate program at UTD. But I wonder if the certificate is redundant to the PMP Certification. I certainly wouldn’t mind taking the courses if it actually helps me do my job better. Although there is an interesting Business Intelligence Certificate course at SMU that also looks good. I did see some of my old professors teaching some of the classes within this program. Both programs are about 18 credit hours each, which essentially is an entire semester. However, with the UTD course, I think I can work up to getting a Masters.

I guess I should take things step at a time…

Gnocchi with Turkey Meatballs in Vodka Sauce

This is my first attempt at making gnocchi or vodka sauce. It’s actually my first time eating it. To my surprise it was quite good. I was afraid the gnocchi would be too heavy. I didn’t really find my recipe anywhere. I originally was planning on making a Rachel Ray Recipe of gnocchi with chicken meatball soup. But I didn’t have all the ingredients on hand. Plus I had leftover pasta sauce that I needed to use up. Brian actually liked the gnocchi, and the leftovers I had for lunch was still just as good, even better than last night. [...]
