			<content:encoded><![CDATA[<p>I&#8217;ve been slowly stocking our freezer with home cooked meals. Albeit meals filled with carbs. Traditional Lasagna, butternut squash lasagna, and Mac n cheese. I&#8217;ll focus on more healthier options next week. It&#8217;s easier to freeze composed meals anyway. Not sure if there&#8217;s a point to freeze chicken that we can quickly grill. </p>
<p>Week 38 and I&#8217;m still experiencing this annoying numbness in my left thigh. The slightest touch feels really annoying. I&#8217;ve tried to stretch it out but that doesn&#8217;t help. </p>
<p>The contractions slowed down on Friday and Saturday but they are starting up again today. It makes me think this baby is in here for the long haul. I guess we will find out more tomorrow. We spent a good bit of time walking around the mall yesterday and I did some yoga today. I&#8217;m hoping the increase in activity will speed up this baby. I still haven&#8217;t felt the baby drop. </p>
<p>We finally washed some baby outfits so I can incorporate it in my hospital bag and we have the car seat base installed in both cars. </p>
<p>I also went out and bought the last thing on my list that I thought I needed which is the breastpump. After doing some research I decided to stick with the Medela. Hope it&#8217;s worth it&#8230; </p>
<p>I have two days of work left before I start my vacation and then maternity leave. </p>
<p>I feel like I&#8217;m about to go on a long sabbatical. My only goal for the next 3 months is to work on maintaining the last few credits I need to maintain my PMP certification. Yay for online courses.</p>

			<content:encoded><![CDATA[<p>I was supposed to spend all of March studying for my PMP exam.  However, since I had Good Friday off, I spent the morning whipping up this challenge.  The cake itself was easy to make, but I am no cake decorator.  In fact I am such a failure at it.  I&#8217;m not sure what it is, lack of tools, lack of patience.  Whatever it is, the cake turned out delicious.  The consistency was dense yet light.  It was almost like a dense angel food cake.  Not sure how to describe it.  It almost tasted like our white cake from our wedding.  The icing itself was perfect.  I&#8217;ve tried making my own icing before, but it just turned out lumpy regardless of how I followed the recipe.  This was light and not too sweet [...]

			<content:encoded><![CDATA[<p>It was more like 2 meals in 1.  Originally I was going to make salmon stuffed crepes, but I saw this on Monika&#8217;s food blog so I thought I would try it.  It only took 45 minutes to make the entire meal so it wasn&#8217;t bad.  I have to say it is quite different from my usual meals but I loved it.  I even took it to work today, but a lunch outing at an Indian place was much more enticing. </p>

			<content:encoded><![CDATA[<p>I worked out today.  YAY.  I actually brought my workout clothes to my cube so I can run downstairs to do some cardio.  It&#8217;s a good feeling.  Now if only I can keep this up for the next few weeks.</p>
<p>I&#8217;ve even started counting my calories today.  Hopefully that will deter me from eating bad stuff.  This morning I had a bagel.  Then for lunch I had a frozen entree &#8211; Chicken Tikka Masala. I&#8217;m not sure what to do for dinner. My plan is to limit the amount of carbs at night.  I bought some salmon yesterday, so we be having fish.  </p>
<p>This weekend was quite uneventful.  Brian hung the speakers I bought him for Christmas.  They&#8217;re now nicely hung in the downstairs family room.  If only he can do the same upstairs or maybe hang some of my other stuff. We also did laundry. I studied some.  THANK GOD my PMP exam isn&#8217;t tomorrow.  I would&#8217;ve died from test anxiety.  Oh and we also went to Home Depot and got a bunch of grass fertilizer and weed killer.  I had a dream the other night that our front lawn was full of weeds.  Needless to say, there were a bunch of weeds.  UGH.  I blame our neighbors.</p>
<p>Anyway, that&#8217;s all I got.</p>

			<content:encoded><![CDATA[<p>Brian and I usually celebrate by going to a movie, having a nice dinner and sometimes even exchanging gifts, only because there&#8217;s not too many times out of the year where you can celebrate yourself as a couple.  Over the past 2-3 years though, we&#8217;ve taken it light.  It&#8217;s nice not to have to stress out about it.</p>
<p>Last year, Brian came home and made dinner.  This year we&#8217;re doing the same, although we&#8217;ll be cooking together.  I splurged (got carried away) at Central Market.  I have to admit that place is a rip off, but it&#8217;s hard to avoid at times.  Anyway, so that&#8217;s our plans for vday.  Too bad our fireplace doesn&#8217;t work, otherwise, we can enjoy a good movie in front of the fireplace.  </p>
<p>Speaking of which, I think we&#8217;ll wait until the summer to get it fixed.  It may be cheaper then.</p>
<p>Anyway, I&#8217;m a little over halfway done with re-reading my PMP Textbox.  I got some other study materials from Amazon which I&#8217;ll conquer this weekend.  Only one month to go. </p>
<p>I&#8217;m also looking at the PM Certificate program at UTD.  But I wonder if the certificate is redundant to the PMP Certification.  I certainly wouldn&#8217;t mind taking the courses if it actually helps me do my job better.  Although there is an interesting Business Intelligence Certificate course at SMU that also looks good.  I did see some of my old professors teaching some of the classes within this program.  Both programs are about 18 credit hours each, which essentially is an entire semester.  However, with the UTD course, I think I can work up to getting a Masters.  </p>

Pad Kee Mow stands for drunken noodles and is a standard Thai Street dish.<br />
This recipe makes a ton so we had plenty of leftovers.  I also have to say that this is my own recipe adapted from my mom&#8217;s kitchen.  Brian thought it was a bit bland, but I think it&#8217;s just right.  If it&#8217;s too bland, just double the sauces. [...]

They remind me of either the oatmeal cream pie made by Little Debbie or the Moon Pies that Brian claims to taste a bit artificial. The recipe originates from the Pennsylvania Dutch area.  But enough with the history.  I made them tonight and yet again another easy recipe.  Not to mention Brian loved them. I remember coming downstairs and seeing a bite missing off one of the pies sitting on the cooling rack.  I know it wasn&#8217;t Reesey&#8217;s teeth mark. So I decided to try Pioneer Woman&#8217;s Marlboro Man&#8217;s Favorite Sandwich.  The recipe was easy peasy and it turned out super delicious.  I did however improvise and used I Can&#8217;t Believe It&#8217;s Not Butter spread instead of actual butter.  I also cut down the butter portion to something more reasonable. <p>I brought these into work and everyone raved about it.  I think I&#8217;ll recreate them at Christmas time.</p>
<h4>Oreo Truffle Balls or Dirt Balls</h4>
<p>8 ounces cream cheese, softened<br />
16 ounces oreos, broken into quarters<br />
Enough best quality white chocolate chopped to measure about 2 cups</p>
<p>In a large mixing bowl, beat cream cheese for a couple minutes to smooth out. Add in just over 1/2 of the broken oreos and mix until thoroughly combined. Add in the rest of the oreos and mix just until combined &#8211; some bigger pieces are ok.</p>
<p>Cover bowl and chill for at least 2-3 hours. Scoop out dough with a heaping teaspoon and roll into 50-60 balls. Cover and place back in the refrigerator to firm up.</p>
<p>Slowly melt the white chocolate in a double boiler, stirring occasionally, until most of the chunks are smooth. Remove and stir to melt the rest of the chocolate. Dip each truffle ball and set aside on a silpat or parchment paper. If the chocolate mixture starts to firm up, place back over the double boiler to slowly remelt, or gently rewarm in the microwave. Store in the refrigerator after all are dipped.</p>
