Tuna Steak with Soba Noodle Salad

I bought a bag of frozen tuna steaks from costco. Ceviche Tacos

March Daring Baker’s Challenge

I was supposed to spend all of March studying for my PMP exam. However, since I had Good Friday off, I spent the morning whipping up this challenge. The cake itself was easy to make, but I am no cake decorator. In fact I am such a failure at it. I’m not sure what it is, lack of tools, lack of patience. Whatever it is, the cake turned out delicious. The consistency was dense yet light. It was almost like a dense angel food cake. Not sure how to describe it. Salmon Piccata and Spinach stuffed Crepes

It was more like 2 meals in 1. Originally I was going to make salmon stuffed crepes, but I saw this on Monika’s food blog so I thought I would try it. It only took 45 minutes to make the entire meal so it wasn’t bad. I have to say it is quite different from my usual meals but I loved it. I even took it to work today, but a lunch outing at an Indian place was much more enticing.

Back to the gym

I worked out today. YAY. I actually brought my workout clothes to my cube so I can run downstairs to do some cardio. It’s a good feeling. Now if only I can keep this up for the next few weeks.

I’ve even started counting my calories today. Hopefully that will deter me from eating bad stuff. This morning I had a bagel. Then for lunch I had a frozen entree - Chicken Tikka Masala. I’m not sure what to do for dinner. My plan is to limit the amount of carbs at night. I bought some salmon yesterday, so we be having fish.

This weekend was quite uneventful. Brian hung the speakers I bought him for Christmas. They’re now nicely hung in the downstairs family room. If only he can do the same upstairs or maybe hang some of my other stuff. We also did laundry. I studied some. THANK GOD my PMP exam isn’t tomorrow. I would’ve died from test anxiety. Oh and we also went to Home Depot and got a bunch of grass fertilizer and weed killer. I had a dream the other night that our front lawn was full of weeds. Needless to say, there were a bunch of weeds. UGH. I blame our neighbors.

Anyway, that’s all I got.

I always thought shellfish was bad, I guess Oysters are actually good for you, although I don’t even know if oysters are shell fish. I’m also surprised that Bluefin Tuna is bad for you. Valentines

Brian and I usually celebrate by going to a movie, having a nice dinner and sometimes even exchanging gifts, only because there’s not too many times out of the year where you can celebrate yourself as a couple. Over the past 2-3 years though, we’ve taken it light. It’s nice not to have to stress out about it.

Last year, Brian came home and made dinner. This year we’re doing the same, although we’ll be cooking together. I splurged (got carried away) at Central Market. I have to admit that place is a rip off, but it’s hard to avoid at times. Anyway, so that’s our plans for vday. Too bad our fireplace doesn’t work, otherwise, we can enjoy a good movie in front of the fireplace.

Speaking of which, I think we’ll wait until the summer to get it fixed. It may be cheaper then.

Anyway, I’m a little over halfway done with re-reading my PMP Textbox. I got some other study materials from Amazon which I’ll conquer this weekend. Only one month to go.

I’m also looking at the PM Certificate program at UTD. But I wonder if the certificate is redundant to the PMP Certification. I certainly wouldn’t mind taking the courses if it actually helps me do my job better. Although there is an interesting Business Intelligence Certificate course at SMU that also looks good. I did see some of my old professors teaching some of the classes within this program. Both programs are about 18 credit hours each, which essentially is an entire semester. However, with the UTD course, I think I can work up to getting a Masters.

I guess I should take things step at a time…
