March Daring Baker’s Challenge

I was supposed to spend all of March studying for my PMP exam. However, since I had Good Friday off, I spent the morning whipping up this challenge. The cake itself was easy to make, but I am no cake decorator. In fact I am such a failure at it. I’m not sure what it is, lack of tools, lack of patience. Whatever it is, the cake turned out delicious. The consistency was dense yet light. It was almost like a dense angel food cake. Not sure how to describe it. Salmon Piccata and Spinach stuffed Crepes

It was more like 2 meals in 1. Originally I was going to make salmon stuffed crepes, but I saw this on Monika’s food blog so I thought I would try it. It only took 45 minutes to make the entire meal so it wasn’t bad. I have to say it is quite different from my usual meals but I loved it. I even took it to work today, but a lunch outing at an Indian place was much more enticing.

Spring Forward

This whole Spring Forward thing is killing me. I can barely get my butt out of bed at 7am. I’ve been running late the last couple days. Not that it’s a big deal though. Perhaps I should set my alarm for 6am instead of relying on Brian’s alarm. That should give me enough time to get out of bed, shower, make lunch and take my time in the mornings.

This morning’s drive was extremely slow. We had fog today and it’s the most dense I’ve seen in years. There were idiots who drove around without their headlights. One of them was a gray car. UGH. I HATE PEOPLE.

I packed my workout bag again today and will be heading off to the gym at lunchtime. Two days in a row. Let’s hope I keep this up for the whole month. If I can do that, it’s one milestone attained!

Anyway, it’s that time of year again where we’re looking at vacation spots. Every year we keep mentioning San Diego, so for once I think we’re going to book our trip there. Not sure why we want to go there in the first place…

I’ve started saving for our Europe trip next year. That is if the value of the dollar is going to go up. If not we’ll probably wait until 2010. The big trip before we start popping out kids. ACK.

Back to the gym

I worked out today. YAY. I actually brought my workout clothes to my cube so I can run downstairs to do some cardio. It’s a good feeling. Now if only I can keep this up for the next few weeks.

I’ve even started counting my calories today. Hopefully that will deter me from eating bad stuff. This morning I had a bagel. Then for lunch I had a frozen entree - Chicken Tikka Masala. I’m not sure what to do for dinner. My plan is to limit the amount of carbs at night. I bought some salmon yesterday, so we be having fish.

This weekend was quite uneventful. Brian hung the speakers I bought him for Christmas. They’re now nicely hung in the downstairs family room. If only he can do the same upstairs or maybe hang some of my other stuff. We also did laundry. I studied some. THANK GOD my PMP exam isn’t tomorrow. I would’ve died from test anxiety. Oh and we also went to Home Depot and got a bunch of grass fertilizer and weed killer. I had a dream the other night that our front lawn was full of weeds. Needless to say, there were a bunch of weeds. UGH. I blame our neighbors.

Anyway, that’s all I got.

Snow AGAIN

After one snow day, followed by a beautiful sunny day, the snow came back with full force. It left much of Dallas all slushy, but the area near my work office had heavy snowflakes. It was so pretty. Anyway, it took me over 2 hours to get home as documented by my trusty iPhone. But that also included a detour to the pharmacy in Richardson to pick up my dad’s prescriptions. So my early release day pretty much suck. Now I’m just catching on work stuff.

SNOW

We finally got snow. I didn’t think we would this season considering it’s already March, but we finally got it. It started last night around 6. I wish we took some pictures of our house since this is the first snow at our new house. Oh well, maybe next time. I doubt it’s going to stay cool for long, so by the time we get home, it would’ve melted. There were several traffic accidents on the way to work. Why can’t people be more cautious? I mean you don’t have to drive slow, but just be more aware.

I usually get all giddy when we do have snow, but with all that is going on, it’s hard to feel that way. I just come to work, go to the hospital, go home, have dinner and fall asleep. How sucky is that? On top of that, I have to take a different route to work so I can drop my mom off at her place and traffic is ten times worse. UGH. Thank goodness for starbucks on the way. Speaking of which, we need to drink more coffee at home. Brian and I both went to Starbucks to buy a bag of beans so we’ve got tons of coffee to use up. I love freshly ground coffee and my grinder for that.

I managed to read a chapter for the PMP exam. As long as I can put in the extra effort on the weekends, I think I will be ok. I’ve got a full month now, so no more excuses.

I am hoping my dad will be released from the hospital tomorrow, so life will be back to semi normal in the next few days. We will see.

In other news, I was hoping to go vote today, but I guess I will wait until election day. I’m still torn between who to vote for, I suppose because I don’t know enough.

One last thing, I’m wearing a sweater that’s pretty popular at work. I hope the others don’t wear it too.
