I just got the wedding ceremony application in the mail from Holy Cross Lutheran. Yay. I’m going to fill it out and send it tomorrow. I guess the next process is meeting with the pastor and seeing if they’ll want to marry us.

173 more days till our wedding

I think we should’ve scheduled a spring wedding like Brian suggested way back when we first got engaged. I hope it’s not as hot on September 2nd. I’m thinking it may be considering this drought and it was unbearably hot this past weekend. Ugh! I know we’ll be indoors for the most part but it’s still going to suck.

Anyway, Brian found a better deal to Riu Palace at Cabo on Funjet. I think we may go that route than booking through Expedia. I need to call Tony and schedule time for our engagement pictures. I was thinking the end of April would be good. Potential locations of the engagement pictures would be Las Colinas Canals, Downtown, Mockingbird Station (although it’s too close to work), Arboretum, or White Rock Lake. I like the fake Venetian settings of the Canals the most.

Dallas is so uninspiring. There is absolutely zero culture that really defines it. Blah…

Veil

Well turns out that the veil is too ivory. So I’ll be selling it to whomever wants it for 15 bucks. I’ll just have to get another one in white. The quality was good so I’m happy with getting it from Ebay. Secondly, when I got the veil, I decided to try on the dress for the first time since I tried it on at the bridal store. It’s loose!! Yay. I did notice that the security tag is still on the dress..arrg, so I have to take it back so they can remove it. Now I need to call someone to schedule the dress for alterations, but I’ll have to wait till the last possible minute.

Also, the bridesmaids dresses are here. That was fast. Julie and Yi are picking them up, so hopefully there’s nothing wrong with them. The other night I had a dream that they both got the dresses, and one of them was orange and the other was jade. The two got into a fight about who gets what color. Arg. I’m sick of getting these dreams.

Aussie ChickenIn light of tonight’s meal I’d like to post this recipe for everyone to share. About 6 years ago this time, Brian came up to Dallas to spend Spring Break with me. I decided to make a home-cooked meal for him and found this recipe from AllRecipes.com. At the time I only made this chicken dish and Pillsbury biscuit. I had no time for sides. Hehe. Needless to say, I got rave reviews from Brian, said it was the best chicken dish he’s had (I think, or maybe I’m just thinking that). Some people on The Knot have a variation of the recipe and call it Ft. Worth Chicken. :-p Anyway, here is my version from 6 years ago. Unfortunately Brian says it’s never been as good as the first time I made it. Probably because I don’t have all the ingredients and do my usual improvising :-(

INGREDIENTS:

4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
2 teaspoons seasoning salt
6 slices bacon, cut in half
1/2 cup prepared mustard
1/2 cup honey
1/4 cup light corn syrup
1/4 cup mayonnaise
1 tablespoon dried onion flakes
1 tablespoon vegetable oil
1 cup sliced fresh mushrooms
2 cups shredded Colby-Monterey Jack cheese
2 tablespoons chopped fresh parsley

DIRECTIONS:

Rub the chicken breasts with the seasoning salt, cover and refrigerate for 30 minutes.
Preheat oven to 350 degrees F (175 degrees C). Place bacon in a large, deep skillet. Cook over medium high heat until crisp. Set aside.
In a medium bowl, combine the mustard, honey, corn syrup, mayonnaise and dried onion flakes. Remove half of sauce, cover and refrigerate to serve later.
Heat oil in a large skillet over medium heat. Place the breasts in the skillet and saute for 3 to 5 minutes per side, or until browned. Remove from skillet and place the breasts into a 9×13 inch baking dish. Apply the honey mustard sauce to each breast, then layer each breast with mushrooms and bacon. Sprinkle top with shredded cheese.
Bake in preheated oven for 15 minutes, or until cheese is melted and chicken juices run clear. Garnish with parsley and serve with the reserved honey mustard sauce.

Candy Buffet Jars

So yesterday after coming back from visiting my parents, I thought I would stop by GardenRidge. The only location I know of is north on 75 somewhere in Plano. I drove and drove and did not find it. I heard they were having and sale was hoping to find something I could use for the wedding. Oh well.

I stopped by Marshalls instead and found glass pieces on sale. I got a clear, tall, very large wine goblet thingy, clear bowl, cylinder hurricane lamp looking glass container, and some other cool shaped glass container. All of this will be used towards the candy buffet and I got all 4 or 5 pieces for 30 bucks. Now all I need is to go to Walmart to buy real candy jars to complete the set. Yay!

Got a veil

veil - ebaySo I bid on a veil on Ebay. It’s ivory so I hope it matches my dress. Anyway, I got it for 17.80 which includes shipping. Yay. Now all I need is a crinoline. I was going to bid on it, but wasn’t sure what size I needed.

Everything is finally falling into place. I still need to find a florist and a church. Maybe I should give the Holy Cross Lutheran church a call. Brian said he didn’t like it that much. I don’t care. There’s absolutely nothing wrong with it. I want to get married in a church. Anyway, as soon as we finalize that, we can get started on the invitations. I guess I need to finish those by the end of July? I think one month is good enough, especially since it’s a holiday weekend.

Anyway, I’m tired.

Edit:
The veil is in. It’s at the apt office. Too bad they close before I get home from work. I can’t wait to get it!! Now I need a crinoline. The ones on ebay are about 25 bucks plus shipping. I don’t know how much they cost at the bridal shops, but I definitely want a cheap one. When am I ever going to wear a crinoline or petticoat again???
